Easy peanut butter cookies

Peanut butter makes these cookies healthy, right? Right. 

I’m a firm believer that weekends are made for lounging around in sweatpants and treating yourself. I was craving dessert, but nothing too sweet, and then realized I had everything I needed to make peanut butter cookies!

I top my cookies with a dash of kosher salt, but you can always omit if you’re not into that combo.

You will need:

  • 1/2 cup peanut butter
  • 1/2 cup melted unsalted butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 1 1/4 cup all purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • kosher salt to top (optional)

Preheat your oven to 375 degrees.

Mix your peanut butter and butter together until it’s a smooth mixture. Beat your sugars in, and once the mixture has come together beat in your egg and vanilla.

  In a separate bowl, whisk together your flour, baking soda, and salt. Pour the dry mixture into your wet mixture and combine until it forms a dough.



Line a flat baking sheet with foil or parchment paper and grab a heaping tablespoon of dough. Roll it into a ball, place it onto the baking sheet, and use a fork to gently press down and indent the cookie. 
Sidenote – does anyone know why this is a thing for peanut butter cookies? Like who was the first person who thought, you know what this needs? Fork marks. 

Anyway. Place the cookies into your oven for about 10 minutes. Sprinkle with sea salt right when you take them out, let them cool, and then give up waiting for them to cool and stuff one into your mouth.
