Avocado hummus

As a Californian, I’m always looking for ways to include avocado into everything. They’re also crazy cheap right now so obviously I bought a huge bag of them.

Making your own hummus is super easy. As long as you have some tahini on hand, you can whip up hummus in just a few minutes.

You will need:

  • 2 ripe avocados
  • juice of 1 lemon
  • 1 15 oz. can of chickpeas/garbanzo beans
  • 3 tablespoons tahini
  • 3 garlic cloves, peeled
  • 2 tablespoons olive oil
  • Salt
  • Water

Drain your chickpeas and rinse them well. It’s best to use canned chickpeas for hummus, I’ve tried using dried chickpeas but the texture was off.

Then you basically just throw everything into your food processor, minus the salt and water.

Blend until smooth. You will probably need to add some water to get it to the right texture, so add a little at a time. Finally, add salt to taste at the end.

Dust some paprika on top and you’re good to go!
