Eggplant pizzas

Sometimes (all the time) I’m craving pizza, but sometimes you just don’t feel like shelling out $20+ on delivery. Or you’re in two weddings back-to-back and need to squeeze into your bridesmaid dress. Or you’ve got some random leftovers sitting around and need to use them.

Well, all of that happened for me at once, so I made eggplant pizzas.

Super quick and easy to whip up. One note, you will probably notice as we get further down that it suspiciously looks like string cheese on my pizza. That’s because that’s the only cheese I had in the house, and I highly do not recommend using it because it doesn’t melt too well.

Let’s get started!

You will need:

  • 1 large eggplant
  • pizza sauce
  • cheese
  • mushrooms
  • italian seasoning
  • garlic salt
  • olive oil
  • pesto (use my recipe!)

If you have a grill, this is the perfect time to use it. If not, you can just cook the eggplant on the stove top.

Cut the eggplant into thick rounds, they will shrink down a bit once they’ve cooked so you want to make sure you can get all your toppings on there. Toss them in olive oil and garlic salt and let them hang out for about 5-10 minutes.

As that’s going, cook your mushrooms in a little olive oil and italian seasoning.

Grill the eggplant for about 5 minutes on each side…

Now you’re ready to assemble! Put some pizza sauce down, then your cheese, mushrooms, and pesto.

Throw it under the broiler for a few minutes, just until the cheese has melted. Dig in and enjoy!
