Sheet pan dinner for two* 

*Or one super hungry person.

We can all agree that one of the worst parts about cooking is the clean up. If you’ve been working all day, the last thing you want to do is wash 100000 dishes after making dinner.

Enter the sheet pan.

Sheet pan dinners are super clutch since you can throw everything onto one foil-lined sheet and cook it all at once. This dinner is one of my favorites because it’s pretty clean, but super satisfying.

You will need:

  • 2 chicken breasts
  • 2 sweet potatoes
  • 1/2 pound Brussels sprouts
  • 1/2 lemon
  • Salt
  • Pepper
  • Paprika
  • 1 teaspoon chopped garlic
  • Lemon pepper

Preheat your oven to 400 degrees.

Chop the sweet potatoes into large cubes, and toss with olive oil, paprika, salt, and pepper. Throw them on one side of your sheet pan and you’re already 1/3 of the way to getting dinner ready!

Add your brussels sprouts right to the same bowl and drizzle with olive oil, salt, and lemon pepper. Throw them on to the other side of your sheet.

Finally, put your chicken in the bowl and drizzle with olive oil, along with the juice of half a lemon, paprika, salt, pepper, and chopped garlic. Toss well and add to the sheet, spooning any of the excess liquid on top.

Bake this for 20-25 minutes, or until your chicken is cooked through.
