5-minute Acai Bowls

Happy new year! I’m sure a lot of us (myself included) are on a #NewYearNewMe hype and trying to drag our butts to the gym and eat healthier, which I 100% applaud. Have I made this resolution every year for the past god-knows-how-many years? Yes. Have I sworn every year that this will be the year I get my Beyoncé bod? Yes. Have I gotten my Beyoncé bod yet? No. Then again I’m the girl who swears eating raspberry-lemon cookies counts as getting your fruit intake, so…

Anyway. Acai bowls are one of those trendy food things that I wanted to hate, but when I tried one I was hooked. I can’t describe the taste of acai except that it’s kind of like a blueberry, but not (I know, I’m super helpful). By itself it is tart and bitter so usually when you buy these bowls they are heavy on the sugar, which kind of defeats the whole purpose of getting a smoothie in a bowl. So I’ve decided to take matters into my own hands and make my own acai bowls at home!

Don’t know where to buy acai because you don’t have a fancy shmancy grocery store nearby? It’s in the freezer aisle at Trader Joe’s.

You will need:

  • 1 packet frozen acai puree
  • blueberries
  • raspberries
  • one banana
  • low-sugar granola
  • honey

**Acai will come in individually wrapped frozen packets, and the ones from Trader Joe’s are 3.5 oz per packet.

Run the acai packet under hot water for a few seconds, and squeeze it to break up the fruit and make it easier to get out. Throw it in the blender with half of a banana, one teaspoon of honey, 1/3 cup of blueberries, and 1/3 cup of raspberries. This will be super thick so you may need to add a little bit of water to get things moving.

Once your puree is done, scoop it into a bowl and add sliced banana, blueberries, and granola on top. Drizzle a little more honey and BOOM you are done!
