If you’re trying to cut carbs out of your diet, riced cauliflower is your savior.
Trader Joe’s conveniently sells bags of riced cauliflower, or you could do it yourself in your food processor. It’s a great substitute for rice and helps you up your veggie intake too!
You will need:
- 1 pound riced cauliflower
- 1 green bell pepper, chopped
- half an onion, chopped
- 4 cloves garlic, chopped
- 8 oz mushrooms, chopped
- 1/2 pound ground turkey
- 1 tablespoon soy sauce
- 1/2 tablespoon oyster sauce
- 1/2 tablespoon sriracha
- 3 eggs, beaten
- vegetable oil
Prep your veggies! Chop the onion, mushroom, and bell pepper on one board and keep your chopped garlic on hand to the side.
Heat up some vegetable oil in a large pan and add the ground turkey. Cook until it starts to lose the pink color, and then add your onion, mushroom, and bell pepper.
Add your riced cauliflower, and drizzle the oyster sauce, soy sauce, and sriracha into the pan. Move the mixture around and let everything cook down/together. This makes a lotttttt of fried “rice”, so this will take a bit.
When your mixture is at the halfwayish point, add your garlic and keep moving the rice around. When the vegetables have browned and the liquid starts to cook off, make a large well in the middle and add your scrambled eggs.
Scramble the eggs around and when they’re starting to firm up, give your pan another good mix/toss so everything is incorporated.
Spoon into bowls and enjoy!
