15-minute spicy chicken 

Today was one of those “how do I use all the crap in my fridge” days.

I had some leftover chicken breasts, one jalapeño, and a quarter of an onion left.

And so I bring to you: 15 minute spicy chicken. There’s no detailed measurements because.. well, this is just one of those dishes on the fly. If you’re cooking for yourself it’s perfect, and will hold you over for 2-3 meals. If you’re cooking for just yourself and your partner, even better! And if you’re cooking for your family or a group, just increase the amount of ingredients I used.

I cut 2 chicken breasts into 1 inch cubes, thinly sliced up the jalapeño, and sliced the onion. Heat up some oil in a large pan, and throw your chicken in first. Let it cook for a minute or two, and then throw in the jalapeños and onion. Sprinkle lemon pepper and cajun seasoning in there, and saute for about 7 minutes (that number looks super specific; I just know it’s between 5-10 minutes).

You can eat it with tortillas, rice, and/or beans for a Mexican-inspired meal, or you can eat it with potatoes for an American meal. Or you can just pair it with whatever you like. Either way, this will be the best 15-minute chicken you ever made.
