Roasted Chili-Lime Pistachios

Looking for a healthier snacking alternative? Stop looking. You’ve found it. You’re done.

Pistachios are a little pricey right now, and the flavored ones are even more expensive. You can get a pretty good deal when you buy ’em plain and in bulk, and just flavor it yourself when you get home. I got a bag of shelled pistachios, but you could certainly use this recipe for pistachios in the shell.

You will need:

  • 1 1/2 cups of pistachios (shelled or unshelled)
  • 2 tablespoons extra virgin olive oil
  • juice of 1-2 limes
  • 1 teaspoon chili powder
  • salt and pepper to taste

Preheat your oven to 300 degrees.

Whisk together the olive oil, lime juice, chili powder, and salt & pepper in a large bowl. Taste the dressing as you go along–the great thing about these recipes are it’s super flexible to your own taste. If you want more spice, sprinkle in some more chill powder. More salt? Put another dash of salt. Pour the pistachios in the bowl, and stir it all together really well. You want to make sure each pistachio is covered in the sauce mixture!

Spread the dressed pistachios on a flat baking sheet lined with aluminum foil. Set it in the middle rack of your preheated oven and let them roast for 15 minutes if they are already roasted, 25 minutes if they are raw. Give them a good stir about halfway through the cooking process, and remove from the oven and let cool. Keep leftovers in a covered/closed container and bring them out whenever you want a healthy snack. Enjoy!
