Fact: mashed potatoes are glorious. If you don’t find joy in potatoes mixed in with butter and heavy cream I don’t trust you, to be honest.
But it’s obviously not the healthiest thing you can eat. Luckily I found a super nommy workaround: cauliflower mash.
Miss mashed potatoes but want to be more health conscious? Cauliflower mash. Trying to sneak more veggies into your family’s diet? Cauliflower mash. Not only are you getting a veggie intake, but we’re subbing goat cheese for the butter and heavy cream. And most importantly, it’s delicious.
Pair with turkey meatloaf and roasted veggies, and you’ve got the perfect dinner.
You will need:
Meatloaf:
- 1 pound ground turkey
- half an onion, chopped
- 1 celery stalk, chopped
- 2 carrots, chopped
- 1 egg
- 3/4 cup bread crumbs
- worcestershire sauce
- 2 tablespoons ketchup or bbq sauce, plus more to top the loaf
- 2 teaspoons paprika
- salt and pepper to taste
Cauliflower mash:
- 1 large cauliflower head
- 4 oz goat cheese
- salt and pepper
- fresh herbs (optional)
Preheat your oven to 325 degrees. In a large skillet, saute your onion, celery, and carrots with the paprika, salt, and pepper. Saute until they’ve just softened, and set aside to cool.
Combine your ground turkey, bread crumbs, and egg in a large mixing bowl. Add a few dashes of worcestershire sauce, along with the ketchup or bbq sauce. Add your sauteed veggies and mix everything together.
Pat the mixture down into a loaf pan, and top with bbq sauce. Let this cook in your oven for 1 hour.
Meanwhile, give your cauliflower a rough chop and steam for 10 minutes.
Remove water from the pot and add the steamed cauliflower into the pot with the goat cheese, salt, and pepper. I picked up some herb goat cheese at the market which made this much easier for me, but if you can’t find that I’d recommend adding some chopped chives to the mix. Use a masher or immersion blender to get things nice and smooth.
Boom! A guiltless comfort meal at home.
